What Is In Potato Balls From Portos?
Cuban Picadillo Filling:
- 1 Pound of Ground Beef
- 1 onion finely chopped
- ⅓ Cup red bell pepper finely chopped
- ⅓ green bell pepper finely chopped
- 1/2 of a jalapeno pepper
- ½ Teaspoon Ground Black Pepper
- 1/2 tsp pepper
- 3 Garlic Cloves, finely minced
- ½ Teaspoon Spanish Paprika
- 1 Teaspoon Ground Cumin
- 1 Tablespoon Tomato Paste
- ¼ Cup Sliced Green Olives, drained
- 2 Tablespoons Olive Oil
- 1½ Teaspoons Fine Sea Salt
- 6 potatoes salted, boiled, and mashed
- 2 eggs beaten with a tbsp of water
- 1/2 cup all-purpose flour
- 1 Teaspoon Fine Sea Salt
- 1½ Cups Panko Crumbs
- Frying Oil, enough for 3 inches of oil
How Do You Make Potato Balls Portos?
Cuban Picadillo Filling:
- Brown ground beef in a non-stick pan over medium-high heat, drain the oil, and set aside to cool.
- Add onion and be careful not to fry; fry until soft and golden brown, about 5 minutes.
- Add bell peppers, jalapeno pepper, black pepper, and cumin and cook for another 2 minutes; set aside to cool.
- In a food processor, add garlic, paprika, and tomato paste; pulse until minced but not pureed into a paste; process for about 30 seconds or until well combined with the meat mixture.
- Reserve 1/4 cup of Picadillo Filling; add to the rest of the filling, and stir in green olives and olive oil.
- Refrigerate the Cuban Picadillo Filling for about 2 hours, so it’s easier to work with later on.
- Combine mashed potatoes and eggs in a bowl, and stir well.
- Add flour and salt and mix until well combined.
- Add Panko Crumbs, and mix until well combined.
- Roll mixture into 1½-inch balls and place on a baking sheet; chill for about 10 minutes to firm up so the filling doesn’t ooze out of potato balls when frying them.
- Heat frying oil in a deep fryer or a pan over medium-high heat, heat to 375°F; add potato balls to the hot oil and cook until golden brown, about 3 minutes.
- Remove Potato Balls from frying oil and place on paper towels; season with salt; serve warm.
