Panes Con Pollo Recipe
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper, to taste
- 4 sandwich rolls
- 1 cup shredded lettuce
- 1 cup diced tomato
- 1 cup diced onion
- 1 avocado, mashed
- 1 cup shredded cheese
- Mayonnaise, to taste
- Preheat your grill or broiler to medium-high heat.
- Mix the cumin, chili powder, salt, and pepper in a small bowl.
- Rub the chicken breasts with the olive oil and seasoning mixture.
- Grill or broil the chicken for 6-8 minutes on each side or until it is cooked through.
- Remove the chicken from the grill or broiler and let it cool for a few minutes.
- Shred the chicken using two forks.
- Assemble the sandwiches by spreading mayonnaise on the top and bottom halves of the rolls.
- On the bottom half of each roll, place a layer of shredded lettuce, diced tomato, diced onion, and mashed avocado.
