Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 4 sandwich rolls
  • 1 cup shredded lettuce
  • 1 cup diced tomato
  • 1 cup diced onion
  • 1 avocado, mashed
  • 1 cup shredded cheese
  • Mayonnaise, to taste

Instructions:

  1. Preheat your grill or broiler to medium-high heat.
  2. Mix the cumin, chili powder, salt, and pepper in a small bowl.
  3. Rub the chicken breasts with the olive oil and seasoning mixture.
  4. Grill or broil the chicken for 6-8 minutes on each side or until it is cooked through.
  5. Remove the chicken from the grill or broiler and let it cool for a few minutes.
  6. Shred the chicken using two forks.
  7. Assemble the sandwiches by spreading mayonnaise on the top and bottom halves of the rolls.
  8. On the bottom half of each roll, place a layer of shredded lettuce, diced tomato, diced onion, and mashed avocado.
  9. Top the vegetables with shredded chicken and shredded cheese.
  10. Place the top half of the roll on top of the cheese and serve immediately.
