- 3 cups water
- 1 cup kokuto (brown sugar)
- 3 tablespoons mirin (sweet rice wine)
- 2 tablespoons sake (Japanese rice wine)
- In a medium saucepan, bring the water to a boil.
- Add the kokuto and stir until it is fully dissolved.
- Add the mirin and sake, and stir until well combined.
- Reduce the heat to low and simmer for 10-15 minutes, or until the mixture has thickened slightly.
- Remove the pan from the heat and let the mixture cool.
- Serve the kokuto as a topping for ice cream or frozen yogurt, or use it as a filling for mochi. Enjoy!
Optional: You can also add diced fruit, such as apples or pears, to the kokuto mixture for added flavor and texture. Simply add the diced fruit to the saucepan with the other ingredients and simmer until the fruit is tender.
