- 1 Filet of salmon

- 2 tbsp Ginger
- 1 tbsp Shallots

- 2 tbsp Miso paste
- 1 Of the lime juice, Half
- 2 tbsp Soy sauce
Baking & Spices
- 1/4 cup Brown sugar
- 1 Salt

- 1 tbsp Butter
- 1 stick Butter
- 2 tbsp Heavy cream
Beer, Wine & Liquor
- 1/2 cup Sake
Liquids
- 2 tbsp Water, Hot
Step Instructions
Step 1: Put salmon in a bowl, cover with soy sauce and leave to marinate for 20 minutes. It should be done by the time you have prepared the other ingredients.
Step 2: Place a large sauté pan or wok over high heat and add butter. Add shallots and ginger julienne when it has melted, and cook for about 1 minute or until soft. Add cream, soy sauce, and brown sugar; bring to a boil stirring constantly.
Step 3: Add sake to the pan, cook for about 2 minutes, turn off the heat, and strain through a sieve into another bowl.
Step 4: Add miso paste, butter, sake mixture, and fish to the same pan and cook for another 3 minutes.
Step 5: Season with salt and lime juice. Turn off the heat and use a plate to push the fish out of the pan onto serving plates. Serve with jasmine rice or doused in the sauce of your choice.
