  1. Mix the flour, milk, eggs, sugar, salt, and vanilla extract in a sizable mixing basin until well combined. Melted butter should be added, then whisk to mix.
  2. Heat a non-stick crepe pan over medium heat. Pour 1/4 cup of the crepe batter into the pan and swirl it to evenly coat the bottom using a ladle or measuring cup. Sauté until just golden brown, about 1-2 minutes per side. Repeat with remaining batter to make about 20-25 crepes. Set aside to cool.
  3. To make the almond cream, beat the heavy cream, powdered sugar, and almond extract with an electric mixer on medium speed until stiff peaks form.
  4. In a medium saucepan, simmer the water and granulated sugar over medium-high heat while stirring occasionally until the sugar dissolves to form the salted caramel sauce. Stop stirring after the mixture reaches a boil and let it stew for a further 5-7 minutes, or until it acquires a rich amber color.. Remove from heat and slowly whisk in the heavy cream, followed by the butter and sea salt. Whisk until smooth.
